Quinta do Fojo is located in Cima-Corgo in the Pinhao valley, which is on the left bank of the Douro river. Margarida Serodio Borges has been growing grapes and making dry red wines with his father for Quinta da Manuela until the late 1990’s. After her father past away, Margardia and her brother Jorge inherited the estate and pioneered their own way of wine making with different names. Margarida continued her journey of producing high quality dry red wine from Douro under Quinta do Fojo. There are three types of wines: Quinta do Fojo, Vinha do Fojo, and Fojo. Quinta do Fojo is made exclusively from the 4 hectare property, which was planted in 1986 with a field blend where Tinta Roriz is the most dominant grape variety. It is fermented in stainless steel tanks. Vinha do Fojo is produced from the 7 hectare vineyard with the average of 35 year old vines- mainly Tinta Roriz. The fermentation is held in shallow granite vats called “Lagares,” where the grapes are foot trodden. It is matured in 60% new French oak barrels for more than 23 months. And, when the vintage is perfect, Margarida releases Fojo, instead of Vinha do Fojo. Fojo is aged in 100% new French oak casks lasting 12 months. Only 5000 bottles are produced in 2013. All the vineyards stand 270 meters to 370 meters above sea level. The wines are elegant, persistent, long-lasting, and well-balanced.
