Rathfinny Estate was established in 2010 near Alfriston in the South Downs of Sussex. Rathfinny occupies a perfect south facing slope, just three miles from the sea. Its climate and chalk soils create the best possible environment for the grapes to produce the world’s finest quality sparkling wines. Rathfinny’s first 50 acres of vines were planted in 2012, and plans to expand up to 350 acres. The planted vines include Pinot Noir, Chardonnay, and Pinot Meunier as well as a small amount of Pinot Gris. Sussex sparkling wines are crafted in the Traditional Method, where the secondary fermentation takes place in the bottle, after which it is left to age in the yeast lees for a minimum of 15 months to develop wonderful autolytic notes. On occasion, some fermentation and/or aging takes place in oak barrels to develop even more complexity. Classic Cuvee is made from a blend of 57% Pinot Noir, 22% Chardonnay, and 21% Pinot Meunier. It is inoculated fermented in stainless steel tanks at 16 degree Celsius, dosage of 5 grams per liter, and aged for 36 months in the bottle. The Classic Cuvee pairs well with prawns, white asparagus, and chicken breast. Rose Brut is made with 63% Pinot Noir, 19% Chardonnay, and 18% Pinot Meunier. It is fermented in stainless steel tanks, and then blended with Pinot Noir aged in French oak for its beautiful color. And, the dosage is 4 grams per liter. It would be a perfect match with Asian cuisine.
